The guardian trees

Pistachio trees need between 5 and 10 years to mature and reach a height ranging from 5 to 7 meters. Most of them are long-lived plants (in some cases over 300 years).

The pistachio tree is a species that adapts to temperate and dry climates and can withstand high temperatures. That is why San Juan is an ideal area for its cultivation.

The happy fruit

The pistachio is not called the same everywhere. In Iran, for example, it is known as “the smiling nut,” and in China as the “happy fruit.” In other countries, it is referred to as the “green almond.”

World Pistachio Day exists

On February 26, World Pistachio Day is celebrated worldwide in honor of the Queen of Sheba, a biblical figure also mentioned in the Quran. An ancient legend tells that each season, she demanded an entire harvest of the best pistachios in the land, as it was one of her favorite foods.

How much does one hectare of pistachios produce?

Productivity per hectare depends on many factors: geographic location, water availability, rootstock, agronomic management, soil, planting density, plant age, and climate—late frosts or hail can severely damage the harvest.

Pistachio production per hectare can range from 1.5 to 3.5 tons per year, with optimal yields of up to 4 tons per year.

What is the profitability of pistachios in Argentina?

Pistachio cultivation is a project with attractive long-term profitability, as the trees take between 6 and 9 years to begin producing, but once they reach full maturity, with proper agronomic management, they can produce for more than 50 years.

The factors that influence the profitability of pistachio cultivation are the market price of pistachios and the yield per hectare of the plantation.

WHAT ARE THE PROPERTIES OF PISTACHIOS?

In addition to being a tasty and versatile nut, pistachios are characterized by their health properties. Some of them are:

  • It is an energy-rich food, high in proteins, carbohydrates, and healthy fats.
  • It has a high content of nutrients, including vitamins E, B2, and B6, as well as magnesium, potassium, fiber, iron, and calcium.
  • It has strong antioxidant properties.
  • Its consumption helps prevent cardiovascular diseases, diabetes, anemia, migraines, constipation, and stress.

Chocolate and pistachio brownie

Ingredients:

200 g of semi-sweet chocolate
3 eggs
150 g of butter
100 g of flour
120 g of sugar
70 g of roasted pistachios

Preparation:

Preheat the oven to 200 °C. Melt the butter and chocolate, then add the flour, sugar, eggs, and pistachios, mixing everything until well combined. Pour the mixture into a square baking pan, previously greased and floured, and bake for 15 minutes. Remove from the pan, cut into portions, and serve.

Greek salad

Ingredients:

– 1 bunch of fresh spinach
– 200 g of goat cheese
– 1 orange
– 100 g of shelled pistachios
– Olive oil
– Sherry vinegar
– A pinch of salt

Preparation:

Wash the spinach, dry it, and place it on a serving dish covering the entire surface. Add small pieces of goat cheese, orange segments, and pistachios on top. Prepare a vinaigrette with olive oil, sherry vinegar, and salt, and dress the salad just before serving.

Pistachio pesto

Ingredients:

– 50 g of grated Parmesan cheese
– A handful of salted pistachios
– Ground black pepper
– Olive oil
– Basil

Preparation:

Blend all the ingredients until a smooth paste is obtained. Store in the refrigerator and use it to season meats, fish, to accompany al dente pasta, or as a dip.
